1 1/2 cup all purpose flour 1 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp cinnamon 1 egg 1 cup mashed bananas (~3) 3/4 cup sugar 1/4 cup oil 1 tsp finely shredded lemon peel ( optional) 1/2 cup chopped nuts if you like nuts:)
Mash bananas & add sugar, egg, lemon peel & oil. In another bowl mix all dry ingredients & make a well in the middle. Add banana mixture all at once to dry mix & mix till incorporated. Fold in nuts. Pour into a lightly greased & floured loaf pan & bake for 50-55 minutes at 350 F. Let it cool completely before cutting.
**** for best flavor, save old bananas in freezer. They will turn black. Defrost them on counter top before mashing.
