Bikini Approved Quinoa (no sodium recipe..perfect for summer!)
Heat 1 teaspoon olive oil in pot with a lid on med-high heat. Add onion and garlic and saute for 2 minutes until aromatic. Add quinoa, water and two handfuls of whatever chopped vegetables you have in your fridge. Turn heat to high and bring to a boil. Reduce to simmer for 25 minutes. Stir to make sure water is fully absorbed. Serve hot as side dish.
Can also serve cold as a summer salad by adding diced cucumber, tomato, green onions, lemon, ground pepper and olive oil.
