Honey and Balsamic glazed & roasted Buttercup Squash
I buttercup squash or other winter squash
2 TBS honey
2 TBS balsamic vinegar
Pepper & Salt to taste
Trim top and bottom of washed buttercup squash. Cut squash open in the center and scoop out seeds with a sharp spoon. Cut squash into half-moon slices about 1” thick.
Placed sliced squash onto oiled roasting pan. Mix the honey and balsamic vinegar and brush onto slices of squash. Roast in a preheated over for 15 minutes at 400 F. Turn squash and brush with honey/balsamic mixture again. Roast additional 15 minutes. Season with salt & pepper.
