Happy Love Day!!!
As far back as I can remember I have celebrated Valentine’s Day as a family. The smell of meatloaf, mashed potatoes and green beans filled the air in my mother’s kitchen. Sitting on the table, lit with candles, a card for every member of the family and a small Valentine’s treat. We waited the arrival of my Dad, on his way home from work. Love was present from every small detail my mom made.
Now a mom myself, I have carried on the same traditions. I make the same heart shaped meatloaf, mashed potatoes, and green vegetables. A small stuffed animal or treat is given to our kids and chocolate covered strawberries are a must for dessert!
Every year the kids are still excited to see the heart meatloaf come out of the oven. My husband, a romantic, always gets me a special gift, and flowers. However the best gift he has always given me is the sweet cards he hand writes.
1pound 99%lean ground turkey
1/4cup diced celery
1/4cup diced onions
1/4cup diced carrots
1/2cup chopped spinach
1/2cup rolled oats
1cup low sugar ketchup
1/2cup low-sugar BBQ sauce
1Tbs brown sugar
Mix all the ingredients in a bowl until well combined. Shape the loaf into a heart, and cover with the topping. Bake the meatloaf at 375* for 45-60 minutes.
